Morning Glory Muffins are a wholesome, moist, and flavorful treat packed with carrots, apples, pineapple, coconut, walnuts, and raisins. This authentic recipe combines warm spices like cinnamon and ginger to create a perfect breakfast muffin or snack that is both nutritious and delicious.

  • Total Time: 35 minutes
  • Yield: 14 muffins

Ingredients

Dry Ingredients

  • 2 cups (250 g) all purpose flour
  • 1 cup (200 g) packed light brown sugar
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger (optional)
  • 1/2 teaspoon salt

Fruits and Vegetables

  • 2 cups (260 g) shredded carrots (about 4 large)
  • 1 cup (140 g) grated Granny Smith apple with peel (about 1 large)
  • 1 cup (8 oz can) crushed pineapple (drained)

Other Ingredients

  • 1/2 cup sweetened shredded coconut (unsweetened also works)
  • 3 large eggs (room temperature)
  • 2/3 cup (160 ml) vegetable oil
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon orange zest (optional)
  • 1/2 cup (64 g) unsalted chopped walnuts (optional)
  • 1/2 cup (80 g) raisins

Instructions

  1. Preheat Oven: Preheat your oven to 375° F (190° C). Line a muffin tin with paper liners and set it aside for later use.
  2. Whisk Dry Ingredients: In a large bowl, whisk together all-purpose flour, baking soda, ground cinnamon, ground ginger (if using), and salt until evenly combined. Then, stir in shredded carrots, grated apple (with peel), and shredded coconut. Set this dry mixture aside.
  3. Mix Wet Ingredients: In a separate large bowl, combine the packed light brown sugar, eggs, vegetable oil, drained crushed pineapple, pure vanilla extract, and orange zest (if using). Mix these ingredients well until fully blended and smooth.
  4. Combine Wet and Dry Mixtures: Add the dry ingredient mixture into the wet mixture. Gently fold with a spatula or spoon just until combined, ensuring not to overmix. Then fold in the chopped walnuts and raisins evenly throughout the batter.
  5. Fill Muffin Tin: Spoon the batter into the prepared muffin cups, filling each about three-quarters full. For an added touch, sprinkle a bit of sugar on top of each muffin to create a slight crunchy topping after baking.
  6. Bake Muffins: Place the muffin tin in the preheated oven and bake for approximately 25 minutes. The muffins are done when a toothpick inserted into the center comes out with just a few moist crumbs. Once baked, allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • To keep the muffins moist, do not overmix the batter once wet and dry ingredients are combined.
  • Optional ingredients like ground ginger, orange zest, walnuts, and shredded coconut can be omitted or substituted according to preference.
  • Room temperature eggs ensure better emulsification in the batter.
  • Drain the crushed pineapple thoroughly to avoid excess moisture in the muffins.
  • Store muffins in an airtight container at room temperature for up to 3 days or freeze for longer storage.
