Delight in these rich and creamy Mint Brownies, featuring a fudgy Oreo-studded brownie base topped with a smooth peppermint cream cheese frosting and a glossy milk chocolate layer. Perfectly balanced with the refreshing taste of peppermint extract, these brownies are ideal for holiday gatherings or any festive occasion.

  • Total Time: 3 hours 15 minutes
  • Yield: 14 servings

Ingredients

Brownie Base

  • 1 (17.8-ounce) package brownie mix (and the ingredients called for on the package, excluding fudge packet)
  • 6 Oreos, finely chopped (including creme filling)

Frosting

  • 3 ounces full-fat cream cheese, room temperature
  • 4 tablespoons unsalted butter, room temperature
  • 1 teaspoon peppermint extract
  • 1/16 teaspoon salt
  • 2 cups powdered sugar
  • Green food coloring (optional)

Topping

  • 1 cup milk chocolate chips (or semi-sweet chocolate chips)
  • 2 teaspoons coconut oil

Instructions

  1. Prepare Brownies: Preheat oven to 350°F. Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal. Follow the package directions for the brownie mix preparation but do not add the fudge packet if included. Finely chop 6 Oreos and fold them into the brownie batter. Pour the mixture into the prepared pan and bake according to package instructions, being careful not to overbake. Remove brownies from the oven as soon as they are done and allow to cool for 3–4 minutes. If you have a fudge packet, spread it evenly over the warm brownies. Cover tightly and refrigerate or freeze while preparing the frosting.
  2. Prepare Frosting: In a large bowl, beat room-temperature cream cheese and butter until smooth and creamy. Add peppermint extract, salt, and optional green food coloring. Gradually add powdered sugar, beating continuously until the mixture is smooth and creamy. Use a spatula to scrape down the sides as needed. Once the brownies are cooled completely, spread the frosting evenly on top. Return the brownies to the fridge to chill while preparing the chocolate topping.
  3. Prepare Topping: In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 20-second intervals, stirring between each, until the mixture is fully melted and smooth. Pour the melted chocolate evenly over the frosting layer and spread gently to create a smooth surface. Let the topping set at room temperature until firm.
  4. Cut and Serve: Once the chocolate topping has hardened, use the parchment paper overhang to lift the brownies out of the pan. Cut into 14 servings using a sharp knife heated under hot water and dried between cuts to ensure clean slices. Let the brownies sit at room temperature for about 30 minutes before serving for the best texture and flavor.

Notes

  • Do not confuse peppermint extract with mint extract; peppermint has a stronger, more distinct flavor ideal for this recipe.
  • Omitting the fudge packet from the brownie mix prevents the brownies from becoming too sweet and allows the peppermint frosting to shine.
  • Microwaving chocolate in short bursts with stirring prevents burning and ensures smooth topping.
  • Allowing brownies to rest at room temperature before serving enhances the texture and flavor.
  • Optional green food coloring can be added to frosting for a festive touch.
