Squash

  • 2 medium delicata squash (about 2 pounds / 907 grams total), washed and dried

Maple Glaze

  • 2 tablespoons maple syrup
  • 2 tablespoons avocado oil (or substitute olive oil or melted unsalted butter)
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat oven: Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy clean-up, or leave it unlined.
  2. Cut squash: Trim off both ends of each delicata squash. Slice each squash in half lengthwise, then scoop out the seeds and stringy bits with a spoon. Place the squash cut-side down on a cutting board and slice into 3/4-inch (2 cm) thick half-moon pieces.
  3. Season: Place the squash slices in a large mixing bowl. In a small bowl, whisk together the maple syrup, avocado oil, salt, and cinnamon. Pour the mixture over the squash and toss to coat evenly.
  4. Arrange: Lay the coated squash slices in a single layer on the prepared baking sheet, ensuring the slices do not touch to allow for proper caramelization. Brush or drizzle any remaining maple syrup mixture over the arranged squash.
  5. Roast: Roast in the preheated oven for 35 to 40 minutes, flipping the slices halfway through cooking, until the squash is tender, golden brown, and caramelized.

Notes

  • Leave enough space between squash slices on the baking sheet to promote browning and caramelization; crowded slices will steam and not crisp properly.
  • Optional garnishes such as pomegranate arils, dried cranberries, pepitas, chopped pistachios, walnuts, pecans, fresh thyme, or goat cheese can enhance presentation and flavor for special occasions.
  • The skin of delicata squash is edible, thin, and crisps nicely when roasted, but you may choose to eat only the flesh if preferred.
  • Store leftovers in an airtight container in the refrigerator for up to 4-5 days. Reheat in the oven, skillet, or air fryer, or add cold slices directly to salads or nourish bowls.
  • A melon baller is helpful for easily scooping out seeds and stringy bits during prep.
