- 1 tablespoon Dijon mustard
- 1 tablespoon maple syrup
- 2 cloves garlic, pressed
- ¼ teaspoon cayenne pepper
- ½ teaspoon sea salt
- ¼ teaspoon freshly ground black pepper
For the Topping
- ⅓ cup gluten free breadcrumbs
- 1 teaspoon olive oil
- ½ teaspoon garlic salt
- ¼ cup pecan pieces
- 2 tablespoons minced fresh flat-leaf parsley
- Sea salt flakes, to taste
For Serving
- Cooked quinoa or other grain, as desired
Instructions
- Preheat Oven: Preheat your oven to 450°F (232°C) to prepare for roasting the cabbage steaks.
- Prepare Quinoa: Cook quinoa or your choice of grain according to package instructions or your preferred method and set aside.
- Slice Cabbage Steaks: Clean the cabbage and carefully slice it into 2-inch thick steaks, ensuring they hold together well for baking.
- Arrange Cabbage on Baking Sheet: Place the sliced cabbage steaks evenly spaced on a baking sheet and set aside.
- Make Maple Mustard Glaze: In a small bowl, whisk together 3 tablespoons olive oil, Dijon mustard, maple syrup, pressed garlic, cayenne pepper, sea salt, and black pepper until well combined.
- Brush Cabbage with Glaze: Using a basting brush, liberally coat each side of the cabbage steaks with the prepared maple mustard glaze.
- Bake the Cabbage: Transfer the baking sheet to the oven and roast the cabbage steaks for 25 minutes until tender.
- Prepare Breadcrumb Topping: While cabbage bakes, mix gluten-free breadcrumbs, olive oil, garlic salt, pecan pieces, minced parsley, and sea salt flakes in a bowl.
- Top and Broil: After 25 minutes, remove the cabbage from the oven, sprinkle the breadcrumb mixture evenly on top of each steak, then broil for 3-4 minutes until the topping is golden and crispy. Watch carefully to avoid burning.
- Serve: Serve the maple mustard cabbage steaks immediately over the cooked quinoa or grain of choice for a wholesome meal.
Notes
- Ensure cabbage steaks are thick enough (about 2 inches) to hold together during roasting.
- You can substitute pecans with walnuts or almonds for the breadcrumb topping.
- Adjust cayenne pepper to control the heat level or omit for a milder dish.
- For a vegan option, ensure the maple syrup and other ingredients fit your dietary needs.
- Serve with your favorite grains such as brown rice, barley, or millet depending on preference.
