Ingredients
Gelatin Mixture
- 1/2 cup (125ml) boiled hot water
- 1 packet (1 Tbsp) unflavored gelatin (or agar-agar as a substitute)
Sugar and Seasoning
- 1/2 cup (100g) granulated sugar
- Pinch of salt
Dairy and Fruit
- 1 cup (250ml) coconut milk, evaporated milk, half and half (10% M.F.), or table cream (18% M.F.)
- 1 cup (250ml) mango puree
Garnish
- Diced mangoes
- Shredded coconut
Instructions
- Prepare Gelatin Mixture: In a medium bowl, whisk together the unflavored gelatin and the boiled hot water until no lumps remain, ensuring the gelatin is fully dissolved for a smooth texture.
- Add Sugar and Salt: Whisk in the granulated sugar and a pinch of salt until both are completely dissolved, creating a balanced sweetness and seasoning base.
- Incorporate Dairy and Mango: Stir in the coconut milk or chosen cream thoroughly, followed by the mango puree. Mix until the entire mixture is smooth and homogenous, with no lumps or streaks.
- Set the Pudding: Pour the prepared mixture evenly into 4 ramekins or small bowls. Cover each container and refrigerate for at least 2 hours to allow the pudding to set firmly.
- Garnish and Serve: Before serving, top each pudding with diced mango pieces and a sprinkle of shredded coconut to add fresh texture and enhance the tropical flavor.
Notes
- You can substitute gelatin with agar-agar for a vegetarian or vegan option, following package instructions for setting.
- Choose the type of milk or cream based on your preference for richness: coconut milk adds a tropical flavor; evaporated milk is lighter, while table cream yields a richer pudding.
- Use fresh ripe mangoes blended into a puree for the best natural sweetness and flavor.
- This pudding needs to chill for a minimum of 2 hours to fully set, so prepare it ahead of time.
