Cookie Dough

- 2 cups Lucky Charms marshmallows (divided)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prepare for baking the cookies.
- Cream Butter and Sugar: In a stand mixer fitted with a paddle attachment, cream the softened butter and granulated sugar together until light and fluffy, about 2 to 3 minutes, scraping down the sides as needed to ensure an even mix.
- Add Egg and Vanilla: Beat in the egg and vanilla extract until the mixture is well combined and smooth.
- Mix Dry Ingredients: Add the all-purpose flour, baking soda, baking powder, and salt to the wet ingredients and mix until just combined to form the cookie dough. Gently stir in 1 cup of the Lucky Charms marshmallows to incorporate them evenly into the dough.
- Form Cookie Balls: Using a size 40 cookie scoop or measuring tablespoons, scoop out dough and roll into balls approximately 2 tablespoons in size. Place the balls onto the prepared baking sheet, spacing them adequately.
- Bake the Cookies: Bake the cookies in the preheated oven for 9 to 11 minutes, or until the edges and tops are just set but cookies remain soft.
- Add Marshmallow Toppings: Remove cookies from the oven and immediately press several Lucky Charms marshmallows from the remaining 1 cup into the tops of each warm cookie.
- Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Storage: Store cooled cookies in an airtight container for up to 3 days to maintain freshness.
