Lentils

- 4 scallions, finely chopped (white parts only)
Dressing & Seasoning

Instructions
- Chop vegetables: Drain the lentils well to remove excess liquid. Chop the tomatoes into small dice, finely chop the parsley, mint leaves, and scallions, focusing on the white parts of the scallions for flavor and crispness.
