A vibrant and tangy twist on classic hummus, Lemony Artichoke Hummus combines creamy chickpeas and tender artichoke hearts with fresh lemon juice and garlic, creating a flavorful Middle Eastern-inspired dip perfect for pita chips or fresh vegetables.

  • Total Time: 10 minutes
  • Yield: 8 servings

Ingredients

Hummus Ingredients

  • 15 ounce can of chickpeas, drained and rinsed
  • 15 ounce can artichoke hearts, drained
  • 1/4 cup tahini (sesame paste)
  • 2 garlic cloves, minced
  • 3 Tbsp fresh lemon juice
  • 1/4 cup extra virgin olive oil
  • 1/4 cup cold water
  • Salt to taste

Instructions

  1. Combine Ingredients: Place the chickpeas, artichoke hearts, tahini, minced garlic, lemon juice, and olive oil into the bowl of a food processor or high-speed blender.
  2. Process Smooth: Blend until the mixture is very smooth, about one minute. Pause to scrape down the sides of the bowl to ensure even blending.
  3. Add Water and Salt: Start the machine again and slowly add the cold water through the feed tube. Once fully blended, add salt to taste and blend briefly to incorporate.
  4. Serve: Spoon the hummus into a shallow bowl. Drizzle with a little extra olive oil and scatter a few chickpeas on top for garnish. Serve with pita chips or raw vegetables for dipping.

Notes

  • For a thinner consistency, add more cold water gradually until desired texture is reached.
  • The hummus can be stored in an airtight container in the refrigerator for up to 3 days.
  • Try adding paprika or chopped fresh herbs on top for extra flavor and presentation.
