These Lemonade Ice Cream Sandwiches are a refreshing and easy-to-make frozen treat perfect for warm days. They combine sweet and tangy lemonade-flavored cool whip with crunchy graham crackers, making a delightful no-bake dessert that’s quick to assemble and sure to satisfy your summer cravings.

  • Total Time: 4 hours 15 minutes
  • Yield: 8 servings

Ingredients

For the Lemonade Filling

  • 1 tub Cool Whip (8 oz.)
  • 2 Tbsp powdered lemonade mix
  • 2 tsp lemon zest

For the Sandwiches

  • 8-10 sheets of graham crackers

Instructions

  1. Prepare the Lemonade Filling: Add the powdered lemonade mix and lemon zest to the thawed tub of Cool Whip. Stir thoroughly until the mixture is fully combined and evenly flavored.
  2. Assemble the Sandwiches: Line 4 to 5 graham cracker sheets on a small parchment-lined sheet pan or flat tray. Evenly spread the lemonade-flavored Cool Whip mixture over the graham crackers. Place another set of graham crackers on top and gently press down to form sandwiches.
  3. Freeze to Set: Place the assembled sandwiches in the freezer for at least 4 hours, preferably overnight, to allow them to firm up completely.
  4. Serve: Remove from the freezer and cut into squares. For best texture, let the sandwiches sit at room temperature for about 5 minutes to soften slightly before serving.

Notes

  • Allowing the sandwiches to sit for a few minutes after freezing helps soften the graham crackers for easier eating.
  • You can adjust the tartness by adding more or less powdered lemonade mix to your taste.
  • Make sure the Cool Whip is fully thawed before mixing to achieve a smooth filling.
  • Storage: Keep leftovers wrapped in plastic wrap or in an airtight container in the freezer for up to one week.
