A quick and flavorful Keto Taco Salad that’s perfect for a low-carb meal. Packed with fresh vegetables, seasoned taco meat, and a creamy spicy dressing, this salad comes together in just 5 minutes, making it an ideal choice for a healthy lunch or dinner.

  • Total Time: 5 minutes
  • Yield: 4 servings

Ingredients

Salad Base

  • 8 cups salad mix
  • 1 1/2 cups cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 cup bell pepper, chopped
  • 1/2 cup radish, sliced
  • 1/4 cup red onion, chopped

Protein

  • 1 pound seasoned taco meat (already prepared)

Dressing & Cheese

  • 1 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1 tablespoon hot sauce (or to taste) OR Jalapeno Ranch (optional)

Instructions

  1. Assemble Salad: Divide the 8 cups of salad mix evenly into 4 bowls. Then, top each bowl with a quarter of the cherry tomatoes, diced avocado, chopped bell pepper, sliced radish, chopped red onion, seasoned taco meat, and shredded cheddar cheese.
  2. Prepare Dressing: In a small bowl, mix together the sour cream and hot sauce to your preferred spiciness. Alternatively, you can use Jalapeno Ranch dressing as a flavorful substitute.
  3. Dress Salad & Serve: Drizzle the dressing evenly over each salad bowl. Toss gently to coat all ingredients with the dressing, then serve immediately for a fresh and tasty keto-friendly meal.

Notes

  • You can prepare your own seasoned taco meat or buy pre-seasoned meat for convenience.
  • Jalapeno Ranch dressing is a great alternative to the sour cream and hot sauce mix; you can find recipes online to make it at home.
  • Feel free to customize the salad by adding other keto-friendly toppings like olives or jalapenos.
  • This salad is best served fresh to maintain the crispness of the vegetables.
