These Keto Cream Cheese Pancakes with Almond Flour are a delicious low-carb breakfast option that combines creamy cream cheese and almond flour for fluffy, tender pancakes. Perfect for a keto-friendly diet, they’re quick to prepare using a blender and cooked on the stovetop, offering a satisfying and gluten-free alternative to traditional pancakes.

  • Total Time: 23 minutes
  • Yield: 12 small pancakes

Ingredients

For the Pancakes

  • 4 ounces cream cheese (about 1/2 cup)
  • 4 large eggs
  • 3 tablespoons almond flour (preferably unblanched almond flour)
  • Pinch of salt (optional)
  • Butter (for cooking the pancakes)

Instructions

  1. Make the Batter: Blend the cream cheese, eggs, almond flour, and salt together in a blender until smooth to create a thin pancake batter.
  2. Heat the Griddle: Preheat a griddle or non-stick skillet over medium heat and melt a small amount of butter to coat the surface.
  3. Cook the Pancakes: Using a tablespoon, slowly pour the batter onto the hot griddle. To achieve round pancakes, carefully spread the batter outwards with the back of a spoon as it starts to cook, using about 2 tablespoons per pancake to make 3-inch pancakes.
  4. Alternative Cooking Shape: If perfect circles aren’t important, pour the batter directly and let it spread naturally on the pan.
  5. Flip and Finish Cooking: Cook each pancake for about 1 minute on the first side until it sets and lightly browns, then flip and cook for another minute or until cooked through. Remove and serve warm.

Notes

  • Unblanched almond flour adds more texture and flavor compared to blanched almond flour.
  • Make sure the pan is hot enough before pouring batter so the pancakes start cooking immediately and hold shape better.
  • Butter is recommended for cooking to prevent sticking and add flavor.
  • This batter is very thin; spreading it carefully helps maintain shape.
  • These pancakes are best consumed fresh but can be warmed up gently later.
