A vibrant and refreshing kale salad featuring a zesty citrus medley of blood oranges and grapefruit, creamy avocado, and tangy feta cheese. Perfect for citrus season, this salad combines fresh, nutrient-rich ingredients with a light orange vinaigrette that softens the kale and brings bright, balanced flavors to your table.

  • Total Time: 10 minutes
  • Yield: 4 servings

Ingredients

Kale and Dressing

  • 1 bunch kale, stalks removed and discarded, leaves chopped
  • 1/8 cup extra-virgin olive oil
  • 1 teaspoon orange zest
  • 2 tablespoons fresh orange juice
  • Pinch of kosher salt

Citrus and Toppings

  • 2 small blood oranges, peeled and sliced into rounds
  • 1 large grapefruit, peeled and cut into segments
  • 1 large avocado, pit removed and sliced
  • 1/3 cup crumbled feta cheese

Instructions

  1. Prepare the Kale: Place the chopped kale leaves in a large bowl. In a small bowl, whisk together the extra-virgin olive oil, orange zest, fresh orange juice, and a pinch of kosher salt to make the dressing. Pour the dressing over the kale and massage the leaves gently with your hands for about 2 to 3 minutes until they start to soften.
  2. Add Citrus and Toppings: Once the kale is softened, add the peeled and segmented grapefruit, blood orange slices, sliced avocado, and crumbled feta cheese to the bowl. Toss everything together gently to combine all the flavors uniformly, then serve immediately.

Notes

  • You can substitute blood oranges with any variety of oranges available.
  • Massaging the kale is essential to tenderize the leaves and make them more palatable.
  • Use fresh-squeezed orange juice for the dressing for the best flavor.
  • This salad is best served fresh but can be refrigerated for up to a day with minimal texture changes.
