Zucchini and Turkey Mixture
- 2 cups grated zucchini (measured before squeezing out liquid)
- 1 pound ground turkey
- 1 tablespoon Worcestershire sauce or coconut aminos
- 1 teaspoon dried oregano
- 1 teaspoon kosher salt
- ½ teaspoon pepper
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ¼ teaspoon paprika
- ¼ cup panko breadcrumbs

- 1 tablespoon avocado oil

Instructions
- Drain the zucchini: Take the shredded zucchini and place it in the middle of a clean dish towel or several paper towels. Wrap it up tightly and squeeze out as much moisture as possible to ensure the burgers stay juicy but firm.
- Mix ingredients: In a large bowl, combine the drained zucchini, ground turkey, Worcestershire sauce, dried oregano, salt, pepper, onion powder, garlic powder, paprika, and panko breadcrumbs. Use clean hands or a spoon to mix everything well, making sure all seasonings are evenly distributed throughout the meat.
- Form patties: Divide the mixture into 4 equal portions and shape each into a patty about 1 inch thick for even cooking and perfect burger size.
- Cook the burgers: Heat a large skillet over medium-high heat and add the avocado oil. When the oil is hot, carefully place the patties in the pan. Cook for about 4-5 minutes on each side until the burgers reach an internal temperature of 165°F (74°C).
- Serve: Place the cooked burgers on hamburger buns and add your favorite toppings to enjoy a delicious, hearty meal.
Notes
- This recipe works well with ground turkey of various fat contents. Higher fat content turkey will yield richer flavor, but 95%-99% lean turkey is also tasty.
- For grilling, chill the patties in the fridge for 20-30 minutes to help them hold their shape better. Press a slight indent with your thumb in the center of each patty to prevent puffing and to ensure even cooking.
- You can substitute yellow summer squash for zucchini as they are very similar vegetables.
- To make gluten free, use gluten free breadcrumbs and buns and replace Worcestershire sauce with coconut aminos.
- Enjoy as a burger bowl by serving the cooked patties on a bed of greens instead of buns.
- Ground chicken can be used instead of turkey as an alternative option.
