Ingredients
Fruit
- 12 strawberries, hulled
- 2 kiwis, peeled and ends trimmed
- 1 navel orange, peeled and segmented with membranes partially removed
- 4 slices shokupan (Japanese milk bread), about 8 mm thick
Whipped Cream
- 1 cup (240 ml) heavy (whipping) cream
- 5 tsp sugar (approximately 10% of cream weight)
- 1 tsp rum (optional)
Instructions
- Prepare the Fruit: Use a paring knife to hull 12 strawberries. Trim both ends of 2 kiwis and peel them. Peel 1 navel orange by hand, segment it carefully removing membranes from the sides of each segment but keeping the outer edge membrane intact to keep the pulp secure. Pat all fruit dry gently with a paper towel to remove excess moisture.
- Make the Whipped Cream: Prepare an ice bath by filling a large bowl with ice water and placing a medium bowl on top. Pour 1 cup heavy cream into the medium bowl and start whisking on low speed using an electric mixer until bubbly. Add 5 tsp sugar and 1 tsp rum (if using) and whisk on medium-high speed until the cream thickens.
- Whisk to Proper Consistency: When peaks begin to form, remove from the ice bath and switch to a hand whisk. Whisk gently until medium peaks form; the cream should hold its shape but be spreadable and not runny, perfect for sandwiches.
- Assemble the Sandwich: Line up 4 slices of shokupan bread. Spread a dollop of whipped cream evenly on each slice, reserving some cream for filling gaps between fruit.
- Add the Fruit: Place fruit thoughtfully on one slice to create an attractive cross-sectional pattern when sliced. For example, align sliced strawberries lengthwise along the diagonal, and arrange kiwis and orange segments crosswise. Add extra whipped cream to fill gaps without overfilling.
- Close and Wrap the Sandwich: Place the remaining bread slice on top of the fruit with the whipped cream side down to form each sandwich. Wrap each sandwich tightly in plastic wrap, marking a guide line on the wrap for cutting.
- Chill with Weight: Place sandwiches between plates or under gentle weight to compress slightly and refrigerate for at least one hour or up to overnight to set and meld flavors.
- Slicing: Remove sandwiches from refrigerator and unwrap one at a time. Slice in half along the marked line with a clean knife, wiping the blade with a hot wet towel between cuts for clean edges. Then cut off crusts carefully, wiping the knife between cuts to keep slices neat.
- Serve Immediately: Reveal the beautiful fruit cross-section and serve the Fruit Sando fresh and chilled. Keep refrigerated if transporting.
- Storage: It’s best consumed shortly after slicing; you may refrigerate the wrapped sandwich whole overnight before slicing if needed. Crusts can be saved and repurposed into crunchy Shokupan Crust Rusks.
Notes
- Chilling the sandwich with weight is essential to compress the sandwich and help it hold its shape when slicing.
- The rum in whipped cream is optional and adds aroma but can be omitted for a kid-friendly version.
- Patting the fruit dry removes excess moisture which prevents soggy bread.
- Keeping the crust on while filling and assembling helps maintain the sandwich structure; remove crusts after chilling before serving.
- Use a sharp, clean knife wiped between cuts to get clean, attractive slices.
- Leftover whipped cream can be used as a dip for fruit or to make a fruit parfait.
- Do not open the sandwich halves before serving to preserve the cream and fruit arrangement.
- Save crusts for making Shokupan Crust Rusks, a delicious crunchy snack.
