  • Total Time: 26 minutes
  • Yield: 15 servings

Ingredients

Skewers and Chicken

  • 15 wooden skewers (soaked in water for 30 minutes)
  • 2 pounds boneless, skinless chicken breasts (cut into 1-inch cubes)
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • 2 tablespoons extra virgin olive oil

Fruits and Peppers

  • 4 yellow peaches (quartered, then halved to make 32 pieces)
  • 3 medium jalapeno peppers (halved, seeded, cut into chunks)

Peach Glaze

  • ½ cup (160 g) peach preserves
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic (minced)
  • ½ teaspoon kosher salt
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon red pepper flakes

Instructions

  1. Season the Chicken: In a large bowl, add the cubed chicken breast, 1 teaspoon kosher salt, ½ teaspoon black pepper, ½ teaspoon chili powder, and 2 tablespoons extra virgin olive oil. Toss everything well to ensure the chicken is evenly coated with the seasoning.
  2. Prepare the Skewers: After soaking the wooden skewers in water for 30 minutes, start threading the ingredients onto each skewer. Alternate by adding a peach piece, chicken cube, jalapeno chunk, chicken cube, jalapeno chunk, chicken cube, and finish with a peach piece. Adjust the threading as desired but follow this order for balanced flavors.
  3. Preheat the Air Fryer: Set your air fryer to 375°F (190°C) and allow it to preheat, ensuring it’s ready for cooking the skewers evenly without sticking.
  4. Brush Skewers and Cook: Lightly brush each skewer with extra virgin olive oil to prevent sticking, then place them in a single layer inside the air fryer basket. Cook for 11-12 minutes, or until the internal temperature of the chicken reaches 165°F (74°C), turning as necessary to cook evenly. Depending on your air fryer size, cook in batches.
  5. Make the Peach Glaze: While the skewers cook, combine peach preserves, 1 tablespoon olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, salt, black pepper, and red pepper flakes in a medium saucepan. Stir the mixture until well incorporated and warm it over medium heat until the glaze is heated through and slightly thickened.
  6. Glaze and Serve: When the skewers are done, generously brush them with the warm peach glaze. Serve immediately while the chicken is juicy and the glaze is flavorful.

Notes

  • Soak wooden skewers in water beforehand to prevent burning during air frying.
  • Adjust jalapeno quantity based on desired spice level.
  • Use a meat thermometer to ensure chicken reaches a safe internal temperature of 165°F.
  • You can substitute yellow peaches with fresh nectarines or white peaches depending on availability.
  • If you don’t have an air fryer, these skewers can be grilled or broiled with similar timing.
