Ingredients

Potatoes

  • 2 Russet Potatoes
  • 2 tablespoons Butter
  • Salt, to taste

Toppings

  • 1 can of Heinz Baked Beans in Tomato Sauce (approximately 425g)
  • About 1/3 cup Grated Cheddar Cheese

Instructions

  1. Preheat Oven: Heat your oven to 400 degrees Fahrenheit (200°C) to prepare for baking the potatoes.
  2. Prep Potatoes: Rinse the potatoes thoroughly, dry them and remove any eyes. Pierce each potato a couple of times with a knife to prevent them from bursting during baking.
  3. Butter and Season: Take 1 tablespoon of butter and spread it all over each potato. Place the potatoes in a baking pan and sprinkle generously with salt.
  4. Bake Potatoes: Bake the potatoes for 45-60 minutes until the skin is crisp and the insides are soft when pierced with a fork.
  5. Heat Beans: While the potatoes bake or once they are nearly done, heat the baked beans in a skillet over medium heat until bubbling hot and warmed through.
  6. Assemble: Remove the potatoes from the oven and place on plates. Slice each potato in half and lightly mash the insides with a fork. Add a slab of butter on each half, then top generously with the hot baked beans and a sprinkle of grated cheddar cheese. Serve immediately.

Notes

  • You can substitute regular potatoes with sweet potatoes for a different flavor.
  • If you prefer a lower fat option, reduce the butter or omit it and use cooking spray.
  • For extra flavor, add a dash of black pepper or paprika on top of the cheese.
  • If you want the cheese melted, place the topped potatoes briefly under a grill/broiler after adding cheese.
  • Leftover jacket potatoes can be stored in the refrigerator for up to 2 days and reheated in the oven or microwave.
