Ingredients
Salad Ingredients
- 1 Head of Romaine Lettuce (large or 2 romaine hearts), chopped
- 1 Cucumber, chopped
- 1 Pint Cherry Tomatoes
- 1/2 Red Onion, thinly sliced
- 1 cup Cubed Ham
- 1 cup Genoa Salami, chopped
- 1/4 cup Pepperonchinis, sliced
Dressing Ingredients
- 1/2 cup Olive Oil (or avocado oil)
- 2 Tbls Red Wine Vinegar
- 1 Tbls Dijon Mustard
- 1 Tbls Oregano
- 1 clove Garlic, minced
- 1/2 tsp Salt
- Fresh Cracked Black Pepper, to taste
Instructions
- Prepare the Lettuce: Wash and dry your romaine lettuce thoroughly, then chop into bite-sized pieces. Place the chopped lettuce as the base in a large salad bowl.
- Add Remaining Salad Ingredients: Add chopped cucumber, cherry tomatoes, thinly sliced red onion, sliced pepperonchinis, cubed ham, and chopped Genoa salami on top of the lettuce in the bowl.
- Make the Dressing: In a small mason jar, add olive oil (or avocado oil), red wine vinegar, Dijon mustard, oregano, minced garlic, salt, and freshly cracked black pepper. Secure the lid tightly and shake vigorously to combine all ingredients evenly. Alternatively, you can whisk the ingredients together in a small bowl until emulsified.
- Toss the Salad: Pour the prepared dressing over the salad ingredients in the bowl. Toss everything together gently but thoroughly to ensure all components are well coated with the dressing.
- Serve and Enjoy: Serve the salad immediately for best freshness and flavor. If you need to save it for later, keep the salad and dressing separate until ready to eat to prevent sogginess.
Notes
- You can substitute pepperonchinis with banana peppers or mild pickled peppers if preferred.
- For a vegetarian version, omit the ham and salami and add chickpeas or toasted nuts for protein.
- Keep dressing and salad separate if preparing ahead to maintain crispness.
- Adjust salt and pepper to taste, especially if your meats are already salted.
- This salad is best enjoyed fresh but can be refrigerated for up to 24 hours if stored properly.
