This creamy and comforting Instant Pot Rice Pudding is a quick and easy dessert or breakfast option made with simple ingredients like rice, milk, cinnamon, and raisins. Cooked under pressure in the Instant Pot, it results in a perfectly tender and flavorful pudding with minimal effort.

  • Total Time: 15 minutes
  • Yield: 4 servings

Ingredients

Main Ingredients

  • 1 cup uncooked rice
  • 2 cups milk
  • 1 cup water
  • ½ cup granulated sugar
  • 1 star anise (optional)
  • 1 teaspoon ground cinnamon
  • ½ cup raisins
  • Pinch of salt
  • 1 tablespoon unsalted butter

Instructions

  1. Combine Ingredients: In the inner pot of your Instant Pot pressure cooker, combine the rice, milk, water, sugar, star anise, ground cinnamon, raisins, and a pinch of salt.
  2. Mix Thoroughly: Mix well to ensure that all ingredients are evenly distributed and that there are no large lumps of cinnamon.
  3. Set Pressure Cooking: Close the lid and lock it into position. Press the MANUAL (pressure cooking) button and adjust the cooking time to 5 minutes.
  4. Natural Release: When the cooking cycle finishes, wait about 7 minutes to allow the pressure to naturally release before manually releasing any remaining pressure.
  5. Finish and Taste: Once the pressure pin has dropped, open the lid and give the pudding a good stir. Stir in the unsalted butter, and taste the pudding. Add additional sweetener if desired.
  6. Serve and Enjoy: Serve warm or chilled according to your preference. Enjoy the creamy and flavorful rice pudding!

Notes

  • Use medium or short grain rice for a creamier pudding.
  • If you prefer a thicker consistency, reduce the water slightly or cook a few minutes longer.
  • The star anise is optional but adds a lovely aromatic flavor.
  • You can substitute raisins with other dried fruits like currants or chopped dates.
  • For a vegan version, substitute milk and butter with plant-based alternatives.
  • Adjust sweetness to taste by adding more or less sugar.
