Instructions

  1. Preheat Oven: Preheat your oven to 120°C (245°F) or 110°C (230°F) fan-forced to ensure a low and steady temperature for the meringue to bake properly.
  2. Prepare Baking Tray: Line a baking tray with baking paper and draw a 23cm circle on the paper. Then turn the paper over so the circle is face down, preventing graphite marks on the meringue.
  3. Beat Egg Whites: In the bowl of an electric mixer, beat the egg whites along with the cream of tartar on medium speed until soft peaks form. This provides the foundation for a stable meringue.
  4. Add Sugar Gradually: Gradually add the caster sugar one tablespoon at a time, beating for 30 seconds between each addition. Continue mixing until the meringue is smooth, glossy, and holds stiff peaks. This process typically takes around 10 minutes.
  5. Stick Down Baking Paper: Use a small amount of meringue on your finger to press and stick down the edges of the baking paper onto the tray to prevent it from moving during baking.
