  • 7 ounce can chopped green chilies

  • 1/4 cup mayonnaise
  • 2/3 cup Parmesan cheese, grated
  • 1 diced jalapeno pepper (optional)

Instructions

  1. Prep: Preheat the oven to 350°F (177°C). Grease a 10-inch skillet or a 9×13 baking pan thoroughly with non-stick spray to ensure the dip doesn’t stick during baking.
  2. Combine Dip Ingredients: In a large mixing bowl, combine the drained Mexicorn, the chopped green chilies, shredded Monterey Jack cheese, grated Parmesan cheese, softened cream cheese, sour cream, and mayonnaise. Add the diced jalapeno pepper if you prefer some extra heat. Sprinkle in a pinch of ground cumin and season with salt and black pepper to taste. Mix everything together until fully incorporated.
  3. Spread in Pan: Transfer the combined mixture into the prepared skillet or baking pan. Spread evenly so the dip cooks uniformly.
  4. Bake: Place the pan uncovered in the preheated oven. Bake for 30 minutes or until the dip is bubbly around the edges and the cheese looks melted and lightly golden.
  5. Garnish and Serve: Once baked, remove from oven and let it cool slightly. Garnish the top with chopped tomatoes, green onions, and/or cilantro as desired. Serve warm with tortilla chips for dipping.
