- Wash and prepare the honeydew: Thoroughly wash and dry the outer rind of the honeydew melon to remove any dirt or unwanted particles. Place it on a cutting board and, using a sharp knife, cut the melon in half. Use a spoon to scoop out and discard the seeds.
- Cut the honeydew into chunks: Slice the honeydew flesh into manageable chunks by first making vertical slices about ½-inch apart, then slicing horizontally near the rind to separate the flesh. Remove the chunks from the rind carefully, and set aside.
- Blend the ingredients: Add the honeydew chunks, cold coconut water, fresh lime juice, and raw honey into a blender. Blend on high for 20 to 30 seconds until the mixture is completely pureed with no visible chunks remaining.
- Strain the mixture: Pour the blended liquid through a fine mesh strainer or sieve into a large glass pitcher or a 64-ounce (2 quart) mason jar. Use a wooden spoon to gently press on the pulp in the strainer to extract as much juice as possible, then discard the solids.
- Chill and serve: Refrigerate the strained agua fresca for at least 30 minutes to allow it to chill or serve immediately over ice made from filtered water. Enjoy this cool and hydrating honeydew melon agua fresca with lime!
