Filling
- 3/4 cup sweetened condensed milk
- 1 1/4 teaspoons peppermint extract
- 1/8 teaspoon vanilla extract
- 4 cups powdered sugar (plus extra for sprinkling)

Instructions
- Prepare the dough: Place the sweetened condensed milk, peppermint extract, and vanilla extract into the bowl of a stand mixer. With the mixer on low, gradually add half of the powdered sugar, then continue adding the remaining powdered sugar bit by bit until the mixture forms a firm dough.
- Knead and roll out: Sprinkle about 3 tablespoons of powdered sugar over a piece of parchment paper. Transfer the dough onto the paper and knead it a couple of times to ensure all ingredients are well combined. Roll the dough into a 1/2-inch thick circle, keeping powdered sugar on top to prevent sticking.
- Cut patties: Use a 1 to 1 1/2-inch cookie cutter or the rim of a small glass to cut out circles. If the dough feels too warm and isn’t cutting cleanly, place it in the freezer for 15 minutes and try again. Arrange the peppermint patties on a parchment-lined baking sheet and freeze for 15 minutes to firm up.
- Melt chocolate: Melt the dark chocolate in the microwave in 30-second increments, stirring well after each to avoid burning. Once melted, let the chocolate cool for 3 to 4 minutes.
- Dip patties: Using a fork, dip each peppermint patty into the melted chocolate, making sure to coat both sides. Place the coated patties back onto the parchment-lined baking sheet. Optionally, add sprinkles on top before the chocolate sets.
- Set chocolate: Place the baking sheet with dipped patties into the refrigerator for 20 minutes to allow the chocolate coating to firm up before serving.

- Use powdered sugar generously to prevent sticking while rolling and cutting the dough.
- If dough becomes too soft to cut, chilling in the freezer helps it firm up without drying it out.
