  • 225 grams juice (or water)
  • 50 grams KNOX gelatin (about 6 packets)
  • 160 grams sugar
  • 60 grams water
  • 200 grams corn syrup (or glucose, honey, or golden syrup as substitutes)
  • 10 grams citric acid (optional, leave out if using alcohol)
  • 1/4 teaspoon candy flavoring (e.g., raspberry, strawberry, tropical punch)

Instructions

  1. Bloom the Gelatin: Combine the gelatin and juice (or water) in a heatproof container. Stir gently to combine and let the mixture sit for 5 minutes so the gelatin can bloom properly.
  2. Prepare the Sugar Syrup: In a large saucepan, mix the sugar and water and bring to a boil. Continue boiling until the mixture thickens and bubbles, reaching around 240ºF. Then, turn off the heat.
  3. Add Gelatin and Sweeteners: Gradually add the bloomed gelatin mixture in chunks along with corn syrup, citric acid, and candy flavoring into the hot sugar syrup.
  4. Mix Until Melted: Stir thoroughly until all ingredients have melted and are fully combined into a smooth mixture.
  5. Remove Foam: Let the mixture sit for 10 minutes to clear and allow foam to rise to the top. Scoop off the foam easily with a spoon.
  6. Fill Molds: Transfer the gummy mixture into a squeeze bottle and pipe it carefully into gummy bear molds or desired shapes.
  7. Chill to Set: Refrigerate for at least 6 hours until the gummies are firm. For best results, allow them to set for 24 hours. Once set, gummies can be stored at room temperature.

  • You can substitute corn syrup with glucose, honey, or golden syrup according to your preference.
