- 1 28-oz canned peaches in juice (800 g, in juice, not in syrup, to avoid added sugar)
- 2 garlic cloves (peeled and roughly chopped)
- 1/3 cup tomato paste
- 1/2 cup chicken stock
- 1 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- 1/2 tbsp olive oil
- 1 tbsp sweet paprika
- 1/4 tsp ground cumin
- 1/2 tsp sea salt
Chicken
- 2 lb chicken breast (900 g)
- Burger buns (to serve, optional and not included in nutrition facts)
Instructions
- Prepare the sauce: Combine all the sauce ingredients including the peaches with their juice in a medium saucepan. Bring the mixture to a boil, then reduce the heat to low and let it simmer gently for one hour to develop a rich and flavorful BBQ sauce.
- Blend the sauce: After simmering, transfer the sauce to a blender or food processor and pulse until it reaches a very smooth consistency. Alternatively, use an immersion blender directly in the saucepan for convenience. Set the blended sauce aside.
- Cook the chicken: While the sauce simmers, place the chicken breasts in a separate pot and cover them with water. Bring the pot to a boil, then reduce the heat and simmer for 30 to 40 minutes, or until the chicken is fully cooked, tender, and no longer pink inside.
- Shred the chicken: Drain the water from the pot and transfer the cooked chicken to a cutting board. Using two forks, shred the chicken by holding one steady and tearing the meat apart with the other until finely shredded.
- Combine chicken with sauce: Transfer the shredded chicken into the prepared peach BBQ sauce and mix thoroughly to coat each piece evenly with the sauce.
- Serve: Serve the pulled chicken as is or spoon it onto burger buns to make sliders. Note that buns are optional and not included in nutrition facts.
