Macaroni and Cheese Base
- 1 tbsp sunflower oil
- 4 cups water
- 1 tsp salt
- 1 lb macaroni spirals (sometimes called scoobi do)
- 2 tbsp butter
- 1 can evaporated milk
- 3 cups white cheddar cheese, grated
Vegetables
- 1 head broccoli, finely chopped
Instructions
- Prepare Macaroni in Instant Pot: Add sunflower oil, water, salt, macaroni spirals, and butter to the Instant Pot in that order. Close the lid, set to cook on high pressure for 2 minutes. Once the cooking time ends, perform a quick pressure release and open the lid safely.
- Mix Cheese and Broccoli: Stir in the evaporated milk and grated white cheddar cheese until the mixture is fully blended and creamy. Add the finely chopped broccoli florets and stir to combine. Replace the lid and let the mac and cheese sit for 5 minutes to allow the broccoli to soften. Serve immediately. For softer broccoli, microwave it separately in a bowl of water for 5 minutes, drain, and then add to the mac and cheese.
- Stovetop Preparation: Bring a large pot of salted water to a boil on the stove. Add macaroni spirals and cook for 8-9 minutes until al dente. Drain and rinse with cold water.
- Create Sauce on Stovetop: Return drained macaroni to the pot over medium-high heat. Stir in butter until melted. Add evaporated milk and white cheddar cheese, stirring continuously until the cheese melts and the sauce becomes creamy.
- Add Broccoli and Finish Cooking: Mix in the finely chopped broccoli and continue cooking for an additional 3-4 minutes until the broccoli is tender but still vibrant. Serve hot and enjoy your healthy mac and cheese with broccoli.

- You can cook broccoli separately if you prefer it softer by microwaving it with water for 5 minutes.
