- 1/3 cup sweetener (sugar, pure maple syrup, erythritol, or honey)

- 3 tbsp cornstarch
- Optional: 3 oz chocolate chips or broken-up chocolate bar
- 3/4 tsp pure vanilla extract
Instructions
- Heat the milk and mix cocoa. In a saucepan, combine 2 cups of your chosen milk, heaping 1/8 tsp salt, 1/4 cup Dutch cocoa powder, and 1/3 cup sweetener. Heat gently while stirring until warm.
- Prepare cornstarch slurry. In a small bowl, whisk together 3 tbsp cornstarch and 1/2 cup milk until the cornstarch is fully dissolved.
- Combine and boil. Once the milk mixture is warm, slowly add the cornstarch slurry to the saucepan. Increase heat and bring the mixture to a boil, stirring constantly to prevent lumps, and cook for 2 minutes.
- Simmer and thicken. Reduce heat to a simmer and continue stirring for an additional minute, allowing the pudding to thicken.
- Add vanilla and chocolate pieces. Turn off the heat, then stir in 3/4 tsp pure vanilla extract and the optional 3 oz of chocolate pieces until the chocolate melts and is fully incorporated.
- Chill to set. Transfer the pudding to a refrigerator-safe container and chill for a few hours or overnight. The pudding will thicken further as it cools, developing a luscious texture.
