Ingredients
Vegetables
- 1 head cauliflower (chopped into florets or 4 cups riced cauliflower)
- 1 small onion (finely chopped)
- 1/2 cup fresh or frozen peas
- 1/2 cup carrots (cubed)
- 2 cloves garlic (minced)
- 2 Tbsp green onions (chopped)
Sauce and Seasonings
- 1/4 cup low sodium soy sauce
- 1 Tbsp honey
- 1/4 tsp fresh grated ginger or 1/8 tsp ground ginger
- 1/4 tsp red pepper flakes
Others
- 2 eggs (lightly beaten)
- 1 Tbsp sesame oil
Instructions
- Rice the Cauliflower: Chop the cauliflower into florets and pulse in a food processor until it resembles the texture of rice. Alternatively, use store-bought riced cauliflower. Set aside.
- Sauté the Vegetables: Heat a large pan over medium heat and drizzle in the sesame oil. Add the finely chopped onion, peas, and cubed carrots. Sauté for about 2 to 3 minutes until the vegetables are tender.
- Prepare the Sauce: While vegetables cook, whisk together the soy sauce, honey, fresh grated ginger, and red pepper flakes in a small bowl. Set this mixture aside for later use.
- Cook the Eggs: Push the sautéed vegetable mixture to one side of the pan. Pour the lightly beaten eggs into the empty side and scramble until fully cooked. Then, combine the eggs with the vegetables by stirring them together.
- Add Cauliflower Rice and Sauce: Stir in the riced cauliflower into the skillet with the vegetables and eggs. Pour the soy sauce mixture over the top and mix well to combine all ingredients.
- Cook Until Tender: Continue to cook everything together for an additional 3 to 4 minutes, stirring occasionally, until the cauliflower rice is soft and tender.
- Serve: Remove from heat, sprinkle with chopped green onions, and serve immediately.
Notes
- You can use frozen cauliflower rice directly without thawing, but cooking time might slightly increase.
- For extra protein, add cooked chicken, shrimp, or tofu.
- Adjust red pepper flakes according to your preferred spice level.
- Use tamari instead of soy sauce for a gluten-free option.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
