This Hatch Green Chile Cheese Dip is a creamy, cheesy appetizer that’s packed with the smoky, slightly spicy flavor of Hatch green chiles. Perfectly melted and bubbly, this dip makes an irresistible snack or party starter when served warm with chips or crostini.

  • Total Time: 30 minutes
  • Yield: 8 servings

Ingredients

Cheese Dip Ingredients

  • 4 ounces diced green chiles (Hatch preferred, any heat level, one small can)
  • 8 ounces cream cheese
  • 1 cup shredded Monterey Jack cheese (or mozzarella, or pepper jack)
  • 1/3 cup shredded cheddar cheese
  • 1/2 cup sour cream (or plain Greek yogurt)
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon salt
  • 3 dashes hot sauce (to taste)
  • 3/4 cup shredded Monterey Jack cheese (or mozzarella, or pepper jack) for topping

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the dip.
  2. Mix Ingredients: In a medium mixing bowl, combine the diced green chiles, cream cheese, 1 cup shredded Monterey Jack cheese, cheddar cheese, sour cream, garlic powder, salt, and hot sauce. Stir everything thoroughly until the mixture is smooth and well blended.
  3. Assemble in Baking Dish: Pour the combined mixture into a baking dish, spreading it evenly. Sprinkle the remaining 3/4 cup shredded Monterey Jack cheese evenly over the top.
  4. Bake the Dip: Place the baking dish in the preheated oven. Bake until the cheese on top is melted and starts to bubble around the edges, approximately 20 minutes.
  5. Serve Warm: Remove the dip from the oven and serve immediately. Pair with your choice of chips, crostini, or vegetable sticks for dipping.

Notes

  • Use Hatch green chiles for authentic flavor, but any diced green chiles will work.
  • Substitute sour cream with plain Greek yogurt for a tangier and slightly healthier option.
  • The choice of cheeses can be adjusted: Monterey Jack, mozzarella, or pepper jack all work well.
  • Adjust hot sauce amount according to your preferred spice level.
  • For a creamier dip, let the cream cheese soften at room temperature before mixing.
