Ingredients
Eyeball Ingredients
- 1 can lychees, drained (reserve the syrup for the punch)
- Blueberries (one to two per lychee for stuffing)
Punch Ingredients
- 1 box (4-serving size) cherry jello
- 1 cup boiling water
- Reserved lychee syrup (from the can)
- 1/2 cup lemon juice
- 24 ounces lemon-lime soda (2 cans) or lemonade
- 1 cup vodka (optional, omit or adjust soda if not using)
- 1/2 cup dark cherries in syrup (with syrup)
- 1 cup mixed berries (fresh or frozen)
Instructions
- Prepare the Eyeballs: Stuff each drained lychee with one or two blueberries, depending on size. Place the stuffed lychees in the freezer to chill and firm up until ready to add to the punch bowl.
- Dissolve the Jello: Pour 1 cup of boiling water into the punch bowl (make sure it’s heat-safe) or a separate heat-safe bowl. Sprinkle the cherry jello powder evenly over the hot water and stir continuously for about two minutes until completely dissolved. Allow the mixture to cool slightly before proceeding.
- Mix the Punch: To the slightly cooled jello mixture, add the reserved lychee syrup, lemon juice, and vodka if using. Stir to combine thoroughly, then add the lemon-lime soda (or lemonade), dark cherries with their syrup, mixed berries, and the chilled lychee eyeballs. Mix gently to incorporate all ingredients.
- Chill and Serve: Refrigerate the punch until well chilled. Serve over ice, or add ice cubes directly to the punch bowl just before serving to keep it cool and refreshing.
Notes
- For a non-alcoholic version, simply omit the vodka and add extra lemon-lime soda or lemonade to maintain the balance of flavors.
- Freeze the lychee eyeballs ahead of time to keep the punch cold and add to the spooky presentation.
- Use frozen mixed berries if fresh ones are unavailable; they will help chill the punch as they thaw.
- If you prefer a thicker punch, reduce the amount of soda and increase the jello slightly, allowing it to set more.
