Ingredients

Cake Pops

  • 1 vanilla cake mix (plus ingredients listed on the box)
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 12 oz colored candy melts
  • Cakesicle mold
  • Popsicle sticks

Instructions

  1. Prepare Cake: Bake the vanilla cake mix according to the package directions, but ensure it is barely baked through so the cake remains extremely moist.
  2. Mix Cake Dough: Immediately after baking, pour the hot cake into the bowl of a stand mixer. Avoid overbaking, as a drier cake will be harder to mold.
  3. Add Sugar and Flavor: Add powdered sugar and vanilla extract to the cake, then mix on low speed with the paddle attachment until a dough forms that can be pressed into a ball.
  4. Fill Molds: Portion the cake dough into the cakesicle mold, pressing down and smoothing the dough with a small silicone spatula.
  5. Insert Sticks and Freeze: Insert popsicle sticks into each mold cavity filled with cake dough. Freeze the molds for 10-15 minutes until the cake pops are firm.
  6. Remove from Molds: Hold the stick and gently press down on the mold to release each cakesicle, then push the stick up and out of the mold carefully.
  7. Freeze on Tray: Place the cakesicles on a cookie sheet and back into the freezer to firm up while preparing the coating.
  8. Melt Candy Coating: Melt colored candy melts until smooth, then pour into a tall, narrow container for dipping.
  9. Dip Cake Pops: Dip each chilled cakesicle into the melted candy melts, shake gently to remove excess coating, then set upright to start setting before placing on a silicone mat to fully harden.
  10. Decorate: Use additional colors of melted candy melts to decorate the cake pops as desired.
  11. Serve or Package: Serve immediately or package individually in bags with ribbons for gifting.
  12. Storage: Store at room temperature for up to 3 days.
