Ingredients
For the Teriyaki Sauce
- ¼ cup soy sauce
- 3 tablespoons brown sugar
- 1 cup water, divided
- 2 tablespoons honey
- 3 garlic cloves, minced
- 1 teaspoon fresh ginger, grated or minced
- 2 tablespoons corn starch
- 1 tablespoon orange zest
For the Stir Fry
- 1 lb ground turkey
- 2 teaspoons sesame oil
- 3 cups broccoli florets, fresh or frozen
- 1 small onion, small diced
- 1 cup shredded carrots
- Salt and pepper to taste
Instructions
- Prepare Teriyaki Sauce: In a small saucepan over medium heat, combine ¾ cup water, soy sauce, minced garlic, grated ginger, honey, and brown sugar. Stir to combine and bring the mixture to a low boil.
- Thicken Sauce: In a separate bowl, whisk together ¼ cup water and corn starch until fully dissolved. Slowly pour this slurry into the boiling sauce, stirring continuously until the sauce thickens. Remove from heat immediately and stir in the orange zest. Set aside until ready to use.
- Cook Aromatics: Heat sesame oil in a wok or large skillet over medium-high heat. Add diced onion and cook for several minutes until softened.
- Cook Turkey: Add ground turkey to the skillet with onions. Cook, stirring and breaking up the meat, until the turkey reaches an internal temperature of 165°F (about 7-10 minutes). Season with salt and pepper to taste.
- Add Vegetables: Stir in broccoli florets and shredded carrots. Cook until the vegetables are heated through and tender, about 3-5 minutes.
- Combine with Sauce: Reduce heat to low and pour the prepared teriyaki sauce over the turkey and vegetables. Simmer for several minutes, allowing flavors to meld.
- Serve: Serve the ground turkey teriyaki stir fry over cooked rice, noodles, or cauliflower rice, and garnish with sesame seeds and green onions if desired.
Notes
- You can substitute ground chicken, pork, or beef for turkey. If using beef, drain excess grease after cooking.
- Add heat by incorporating cayenne pepper, red pepper flakes, or a splash of sriracha.
- Feel free to add or swap veggies such as snow peas, bell peppers, or baby corn.
- This dish is versatile; try it as lettuce wraps or over cauliflower rice or noodles.
- If the teriyaki sauce becomes too thick, thin it with a little water to your preferred consistency.
