Ingredients
For the Ground Turkey:
- 1 lb ground turkey
- 1 Tbsp sesame oil (or favorite cooking oil)
- 2-3 garlic cloves, minced
- 2 tsp grated ginger
- ½ tsp smoked paprika
- ½ tsp onion powder
- 3 Tbsp soy sauce (low sodium)
- 1-2 Tbsp sriracha
- 2-3 Tbsp chicken broth
- 2 tsp honey
- ½ tsp black pepper
- ½ tsp sea salt (adjust to taste)
- 2 tsp corn starch
For the Bang Bang Sauce:
- ½ cup mayonnaise
- 3 Tbsp sweet chili sauce
- ½-1 Tbsp sriracha (adjust for spice preference)
- 1 tsp rice vinegar
- 2 tsp honey
To Assemble:
- Cooked rice
- Shredded carrots
- Sliced cucumbers
- Shelled edamame
- Pickled onions
- Avocado
- Shredded cabbage
- Sliced green onion
- Sesame seeds
Instructions
- Prep Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, rice vinegar, and honey until smooth. Taste and adjust spiciness with extra sriracha or balance sweetness with more honey or sweet chili sauce. Chill the sauce until ready to serve.
- Cook Ground Turkey: Heat sesame oil in a large skillet over medium-high heat until shimmering. Add the ground turkey, breaking it up with a spatula. Cook until evenly browned and no longer pink, reaching an internal temperature of 165°F.
- Add Flavorings: Lower heat to medium-low. Stir in minced garlic, grated ginger, smoked paprika, onion powder, soy sauce, sriracha, chicken broth, honey, black pepper, and sea salt. Simmer mixture for 2-3 minutes, stirring occasionally to combine flavors.
- Thicken the Mixture: Sprinkle corn starch evenly over the turkey mixture and stir well to thicken. Cook for an additional 1-2 minutes until sauce coats the meat and slightly thickens. Optionally, stir in about 2 tablespoons of prepared bang bang sauce for added flavor before serving.
- Assemble Bowls: Layer cooked rice in bowls, then add your choice of shredded carrots, sliced cucumbers, edamame, pickled onions, avocado, shredded cabbage, or any preferred veggies. Spoon the ground turkey mixture on top, drizzle generously with bang bang sauce, and garnish with sliced green onions and sesame seeds. Serve immediately.
Notes
- You can customize vegetable toppings according to your preference or seasonal availability.
- For a spicier dish, increase the amount of sriracha in both the turkey mixture and the sauce.
- Use low sodium soy sauce to reduce salt content if preferred.
- Leftovers store well and can be refrigerated for up to 3 days.
- Substitute ground chicken or lean ground beef if desired.
