Ingredients

Sweet Potatoes

  • 2 medium sweet potatoes, peeled and diced into cubes (or 1 large)
  • 1 tablespoon olive oil (15 ml)
  • 1 teaspoon salt (5 grams)
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika

Burger Sauce

  • 3 tablespoons light mayonnaise (45 grams)
  • 3 tablespoons low-fat Greek yogurt (45 grams)
  • 1.5 tablespoons ketchup or tomato sauce (25 grams)
  • 2 teaspoons yellow mustard or Dijon mustard
  • 2 teaspoons Sriracha sauce
  • 2 tablespoons pickle brine/juice (30 ml)

Beef

  • 1.2 lb lean ground beef mince (500 grams, 5% fat)
  • 1 tablespoon olive oil (15 ml)
  • 1 teaspoon salt (5 grams)
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 tablespoon Worcestershire sauce (15 ml)

Toppings

  • ¼ red onion, finely chopped
  • 1 cup cherry tomatoes, sliced or halved (150 grams)
  • ½ cup sliced pickles, dill or sweet (75 grams)
  • ⅔ cup grated cheese, such as cheddar (75 grams)
  • 2–3 cups shredded lettuce, such as Cos or Gem (100–150 grams)

Instructions

  1. Preheat the cooking device: Preheat your air fryer or oven to 200°C (400°F) to prepare for roasting the sweet potatoes.
  2. Prepare sweet potatoes: Toss the peeled and cubed sweet potatoes with olive oil, salt, garlic powder, and smoked paprika until evenly coated.
  3. Cook sweet potatoes: For air fryer: Spread the sweet potatoes in a single layer and air fry for 20 minutes until tender and slightly crisp. For oven: Scatter the sweet potatoes on a flat baking tray without overcrowding and roast for 25 minutes until soft and golden.
  4. Make burger sauce: In a bowl, whisk together light mayonnaise, low-fat Greek yogurt, ketchup, mustard, Sriracha, and pickle brine until smooth. Set the sauce aside or refrigerate if preparing ahead.
  5. Cook ground beef: Heat a skillet over medium-high heat and add olive oil. Add the ground beef, breaking it apart with a spatula. Cook until the meat loses its raw color and begins releasing juices, about 3–4 minutes.
  6. Season and brown beef: Add salt, garlic powder, onion powder, and Worcestershire sauce to the beef. Stir to combine. Continue cooking until most of the liquid evaporates and the beef browns and crisps slightly at the edges.
  7. Prepare fresh toppings: While the beef cooks, grate the cheese and prepare the chopped red onion, cherry tomatoes, pickles, and shredded lettuce.
  8. Assemble the burger bowls: Start with a base of shredded lettuce, then add the roasted sweet potatoes, a generous portion of browned beef, a sprinkle of cheese, onion, cherry tomatoes, and pickles. Drizzle with 1-2 tablespoons of the prepared burger sauce. Serve immediately.
