A fresh and vibrant Grilled Peach and Burrata Salad featuring juicy grilled peaches, creamy burrata cheese, mixed greens, and a tangy herbed lemon vinaigrette, garnished with pistachios and sweet balsamic glaze. Perfect for a light, summery meal ready in just 13 minutes.

  • Total Time: 13 minutes
  • Yield: 2 servings

Ingredients

Salad Ingredients

  • 4 peaches or nectarines
  • 1 ball burrata
  • 6-8 cups mixed greens
  • ⅓ cup tomatoes, chopped
  • ¼ cup pistachios (or chopped walnuts or almonds as alternatives)
  • 1 Tbsp balsamic glaze

For Grilling Peaches

  • ¼ tsp olive oil (for brushing)
  • ¼ tsp salt & pepper
  • extra honey for drizzling as needed

Herbed Lemon Vinaigrette

  • ¼ cup olive oil
  • 1 Tbsp red wine vinegar
  • 1 tsp honey (plus more for drizzling grilled peaches)
  • 1 tsp lemon zest
  • ¼ cup fresh lemon juice (about one lemon)
  • 1 Tbsp fresh basil, chopped
  • ½ Tbsp fresh dill, chopped
  • ¼ tsp fresh oregano, chopped
  • 2 garlic cloves, minced

Instructions

  1. Prepare the Peaches: Slice the peaches or nectarines in half and remove the pits. Preheat the grill to medium heat. Brush the peach halves with olive oil and sprinkle with salt and pepper. Make sure the grill grates are clean to prevent sticking.
  2. Grill the Peaches: Place the peach halves directly on the grill grates without moving them for about 2-3 minutes per side. Use a grill-safe spatula to carefully remove them and set on a plate to cool. Drizzle honey over the grilled peaches while they cool.
  3. Make the Herbed Lemon Vinaigrette: Finely chop basil, dill, and oregano, reserving a small amount for garnish. In a small bowl, whisk together olive oil, red wine vinegar, honey, lemon zest, lemon juice, minced garlic, and the chopped herbs until emulsified.
  4. Assemble the Salad: Once the peaches have cooled, slice them along with the tomatoes. Layer mixed greens in a large serving bowl or plate, then arrange the peach slices, tomatoes, and torn burrata pieces on top. Sprinkle with chopped pistachios and any remaining fresh herbs.
  5. Dress and Garnish: Drizzle the salad generously with the herbed lemon vinaigrette, additional honey if desired, and balsamic glaze. Serve immediately and enjoy the fresh, sweet, and tangy flavors.

Notes

  • Use ripe but firm peaches or nectarines for the best grilling results.
  • If you don’t have a grill, a grill pan on the stovetop works well as an alternative.
  • Walnuts or almonds can substitute for pistachios if preferred.
  • Adjust honey quantity according to your desired sweetness, especially when drizzling over peaches.
