Cookie Dough
- 1 (15.25 ounce) box chocolate cake mix (Duncan Hines Devil’s Food Cake recommended)
- ½ cup vegetable or canola oil
- 2 large eggs
Mint Frosting
- ½ cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon mint extract
- ¼ teaspoon salt
- 1-3 tablespoons heavy cream
- Green food coloring
Chocolate Ganache
- ¾ cup semi-sweet chocolate chips
- ¼ cup heavy cream
Instructions
- Preheat and Prepare: Preheat your oven to 350°F (175°C). Line two cookie sheets with parchment paper to prevent sticking and set them aside.
- Make Cookie Dough: In a large bowl, mix together the chocolate cake mix, vegetable oil, and eggs until well combined, forming a smooth cookie dough.
- Form Cookies: Using a 2-tablespoon scoop, drop dollops of dough onto the prepared cookie sheets, spacing them at least 2 inches apart to allow for spreading.
- Bake Cookies: Bake in the preheated oven for 10-12 minutes, or until the edges are set. Let cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
- Prepare Mint Frosting: Using an electric mixer, beat the softened butter until smooth. Gradually add powdered sugar, then 2 tablespoons of heavy cream, mint extract, salt, and 4-5 drops of green food coloring. Beat until smooth, adding additional heavy cream 1 teaspoon at a time and more food coloring dropwise until desired consistency and color are reached.
- Frost Cookies: Spread a layer of the green mint frosting evenly over each cooled cookie with an offset spatula or butter knife.
- Make Chocolate Ganache: Place the semi-sweet chocolate chips in a microwave-safe bowl. Pour ¼ cup heavy cream over them and microwave for 40 seconds. Allow the mixture to rest for 1 minute, then whisk until smooth to form a glossy ganache.
- Top Cookies with Ganache: Let the ganache cool for 10-15 minutes until slightly thickened, then spoon a heaping dollop over each frosted cookie.
- Set and Serve: Allow the ganache on the cookies to set before serving or storing to ensure a perfect finish.

- Use an offset spatula or butter knife to apply frosting smoothly.
- For stronger mint flavor, increase mint extract slightly but be cautious not to overpower.
- If the ganache is too runny, refrigerate briefly to thicken before spreading.

- Green food coloring can be adjusted to achieve your preferred shade of mint green.
