Ingredients
Pancakes
- 2 cups all-purpose flour
- 3 tablespoons granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon kosher salt
- ¾ cup rainbow sprinkles (not nonpareils)
- 1⅔ cups milk
- 2 eggs
- 1 teaspoon pure vanilla extract
- ½ teaspoon pure almond extract
- 2 tablespoons flavorless oil (avocado, vegetable or canola oil)
Vanilla Icing
- 1 cup powdered sugar
- 2 tablespoons milk
- 1 tablespoon pure vanilla extract
- A pinch of kosher salt
Garnishes
- Extra sprinkles
- Homemade whipped cream
- Vanilla icing (from recipe above)
Instructions
- Mix Dry Ingredients: In a large bowl, combine flour, sugar, baking powder, baking soda, kosher salt, and rainbow sprinkles. Whisk everything together until evenly incorporated.
- Mix Wet Ingredients: In a smaller bowl, whisk the milk, eggs, vanilla extract, almond extract, and oil until the eggs are fully combined with the liquids.
- Combine Batter: Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Avoid overmixing to ensure the pancakes remain fluffy and rise well.
- Rest Batter: Let the batter rest for 5 to 10 minutes to allow the ingredients to meld and improve the texture.
- Heat Griddle: Preheat a cast iron griddle or nonstick skillet over medium heat until hot but not scorching. Lightly grease with butter or cooking spray.
- Cook Pancakes: Using a cookie scoop (1.5 tablespoons), dollop the batter onto the griddle to form silver dollar-sized pancakes. Cook until bubbles form on the surface, then flip and cook through. Repeat until all batter is used.
- Make Vanilla Icing: In a food processor or mixing bowl, blend powdered sugar, milk, vanilla extract, and a pinch of kosher salt until the icing is smooth and creamy.
- Serve: Stack the pancakes and drizzle generously with vanilla icing. Garnish with extra sprinkles and homemade whipped cream to make them extra festive.
