- 1 Tablespoon olive oil
- 1 medium yellow onion, diced
- 2 1/2 pounds russet potatoes, peeled and cubed
- 5-6 cups vegetable broth or chicken broth, divided
- 3/4 cup plain Greek yogurt
- 1/4 cup warm water
- Salt and pepper, to taste

Instructions
- Saute Onion: Heat the olive oil in a Dutch oven or stock pot over medium heat. Add the diced yellow onion and sauté for about 5 minutes until translucent and fragrant.
- Add Potatoes & Broth: Add the peeled and cubed russet potatoes to the pot, followed by 4 cups of vegetable or chicken broth. Stir to combine.
- Simmer: Reduce the heat to medium-low and let the soup simmer for about 20 minutes, or until the potatoes are fork-tender and cooked through.
- Add Yogurt: In a small bowl, whisk together the plain Greek yogurt and warm water until smooth. Slowly pour the yogurt mixture into the soup pot, stirring gently to incorporate.
- Blend: Use an immersion blender directly in the pot to blend the soup until smooth and creamy. Alternatively, carefully transfer the soup in batches to a regular blender and blend on the lowest setting with the lid slightly ajar to allow steam to escape.
- Add Broth & Season: After blending, whisk in the remaining 1-2 cups of vegetable broth to reach your desired soup consistency. Season with salt and pepper to taste.
- Garnish & Serve: Ladle the hot soup into bowls and garnish with shredded cheddar cheese, chopped fresh parsley, and/or crispy bacon bits if desired. Serve immediately and enjoy.
Notes
- You can substitute chicken broth for vegetable broth if preferred.
- For a thinner soup, adjust the amount of broth added after blending.
- The Greek yogurt adds creaminess without the heaviness of cream, but you can use sour cream as an alternative.
- For a vegan version, replace Greek yogurt with a plant-based yogurt and use vegetable broth.
- To make the soup ahead, store in airtight containers and reheat gently on the stovetop.
