  • 1 lb. strawberries (1 pint), stems removed & finely chopped
  • 2-4 Tablespoons finely minced red onion
  • 1/4 cup chopped cilantro
  • 1-2 Tablespoons finely minced jalapeño
  • Zest & juice of 1 lime
  • 1/2-1 Tablespoon honey or agave (optional, skip for Whole30)
  • 1/4 teaspoon salt
  • 1/8-1/4 teaspoon pepper

Instructions

  1. Prep Your Ingredients: Remove the stems from the strawberries and finely chop them. Finely mince the red onion, jalapeño, and chop the cilantro carefully.
  2. Combine In A Bowl: In a medium or large mixing bowl, add the chopped strawberries, minced red onion, jalapeño, and chopped cilantro. Add the lime zest and juice, honey or agave if using, salt, and pepper.
  3. Stir To Combine: Gently stir all the ingredients together with a fork to evenly distribute the flavors throughout the salsa.
  4. Let It Rest: Allow the salsa to sit for at least 10 minutes at room temperature to let the flavors meld. Optionally, cover and refrigerate it for 1-2 hours for a cooler, more infused taste.
  5. Taste & Adjust: Sample the salsa and adjust the seasoning by adding more honey for sweetness, lime juice for acidity, salt for brightness, or jalapeño for heat, according to your preference.
