Ingredients
Vegetables & Aromatics
- 1 cup chopped carrots (about 2 large)
- 1 small onion, chopped
- 2 cloves garlic, minced
Beans & Liquids
- 4 cups white beans, cooked (about 2 cans, drained and rinsed)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon dried thyme or rosemary (optional)
- 1/2 cup chicken broth (or water)
- 1/4 cup dry white wine (or more broth/water)
Protein
- 2 to 3 pounds bone-in chicken pieces, skinned
- 1 to 2 pounds fully cooked sausage, cut into 2-inch pieces
Garnish
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Prepare Base: Place the chopped carrots, onion, and minced garlic into the bowl of the slow cooker. These aromatics form the flavor foundation of your cassoulet.
- Add Beans and Seasoning: Layer the cooked white beans over the vegetables. Sprinkle salt, pepper, and dried herbs, if using, over the beans. Pour in the dry white wine and chicken broth or water to add depth and moisture to the dish.
- Arrange Meat: Nestle the skinned bone-in chicken pieces into the beans, pushing some slightly into the mixture for even cooking. Tuck the sausage pieces among the chicken, allowing flavors to meld during slow cooking. Optionally, sprinkle some chopped parsley on top for freshness.
- Cook Cassoulet: Cover the slow cooker and cook on Low for 6 to 7 hours or on High for 4 to 5 hours, until the chicken is tender and the flavors have combined beautifully. This slow cooking ensures the meat is juicy and the beans are flavorful.
- Garnish and Serve: Before serving, garnish with additional chopped fresh parsley to brighten the dish visually and add a hint of freshness. Serve warm and enjoy the comforting stew.
Notes
- For a traditional crumb topping, you can broil the cassoulet after slow cooking by transferring it to an oven-safe dish, sprinkling with breadcrumbs and butter, and broiling until golden brown.
- Use bone-in chicken pieces with skin removed to keep the dish flavorful but less fatty.
- Substitute chicken broth with vegetable broth to make the recipe suitable for vegetarians if you replace the meat accordingly.
- Leftovers keep well refrigerated for up to 3 days and reheat gently on the stovetop or microwave.
- Drain and rinse canned beans to reduce sodium content and improve texture.
