- 1 cup dry red lentils

Instructions
- Preheat & Line: Preheat your oven to 350°F (180°C) and line a large baking sheet with parchment paper or a silicon baking mat to prevent sticking.
- Boil Lentils: In a medium saucepan, combine the dry red lentils and water. Bring to a boil and cook for 10 to 15 minutes until the lentils are fully cooked. Drain well and allow them to cool completely.
- Blend Ingredients: Transfer the cooked lentils to a blender and add the ground paprika, dried rosemary, olive oil, and salt to taste. Blend the mixture until it becomes smooth and creamy.
- Add Rice Flour & Blend: Add the rice flour to the blended mixture and pulse on the lowest blender setting to incorporate it evenly without over-processing.
- Let Mixture Rest: Transfer the lentil mixture into a clean bowl and let it rest for 6 to 7 minutes to allow the rice flour to absorb moisture and improve texture.
- Spread Cracker Dough on Sheet: Using a spatula, spread the lentil dough evenly over the prepared baking sheet to about 2-3mm thickness for thin, crispy crackers.
- Score Dough: Dip a pizza cutter or a smooth knife in water, then gently score the dough into squares. This will make it easier to break into pieces after baking.
- Brush with Oil: Lightly brush the top of the cracker dough with olive oil using a silicone brush to help with browning and crispiness.
- Sprinkle Sesame Seeds & Salt: Evenly sprinkle the mixed sesame seeds and a pinch of salt over the top for added flavor and texture.
- Bake Until Golden Brown: Bake in the preheated oven for 20 to 25 minutes until the edges begin to brown and the crackers start to firm up.
- Break Crackers: Remove the baking sheet from the oven and break the crackers apart along the scored lines. Return the pieces to the oven and bake for an additional 5 to 10 minutes if the centers need more crisping.
- Let Cool Before Serving: Allow the crackers to cool completely on the baking sheet. They will harden and become crisp as they cool, ready to enjoy.
