Ingredients

Rice and Eggs

  • 1 cup cooked cold medium- or long-grain white rice
  • 2 eggs

Vegetables

  • 1 small onion (finely diced)
  • 2 garlic cloves (minced)
  • ½ cup finely diced carrots and frozen peas

Seasonings and Oils

  • 2 tablespoons vegetable oil
  • 1 tablespoon regular soy sauce
  • 1 teaspoon chili garlic sauce (optional)
  • Salt (to taste)
  • White pepper (to taste)
  • 1 teaspoon toasted sesame oil
  • 2 green onions (thinly sliced)

Instructions

  1. Beat the eggs: Lightly beat the eggs with a pinch of salt and pepper until well combined.
  2. Cook the eggs: Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Swirl to coat the pan. Pour in the eggs and let them set slightly before scrambling into small pieces. Transfer to a plate.
  3. Sauté the aromatics: Heat the remaining tablespoon of vegetable oil over high heat. Add the finely diced onion and minced garlic, and stir-fry for about 30 seconds until fragrant.
  4. Cook the vegetables: Add the diced carrots and frozen peas to the pan and stir-fry for about 1 minute until they are just tender but still crisp.
  5. Add the rice: Add the cold cooked rice and stir-fry for 1 to 2 minutes, breaking up any clumps and tossing continuously until the rice is heated through.
  6. Season the rice: Add the soy sauce, optional chili garlic sauce, white pepper, and salt. Stir well to evenly coat the rice with the seasonings.
  7. Combine eggs and rice: Return the scrambled eggs to the pan and gently toss everything until well combined.
  8. Finish and serve: Turn off the heat. Stir in the toasted sesame oil and thinly sliced green onions. Toss well and serve immediately for best flavor and texture.
