Ingredients
Pasta
- 300 g (10.5 oz) pasta
Chicken and Seasoning
- 3 tablespoon olive oil
- 400 g (1 lb) chicken breast, diced
- 30 g (1 ounce) fajita seasoning
Vegetables
- 1 medium onion, sliced
- 1 red pepper, sliced
- 1 green pepper, sliced
Sauce and Cheese
- 150 ml (¾ cup) double cream
- 100 g (3.5 oz) cheddar, grated
- Freshly ground black pepper, to taste
Instructions
- Boil the Pasta: Boil the pasta in salted water according to the instructions on the pack. Before draining, reserve 1 cup of the pasta cooking water for later use.
- Cook the Chicken: In a large pan, heat the olive oil over medium heat. Add the diced chicken breast and shallow fry until slightly golden, about 4-5 minutes.
- Add Seasoning and Vegetables: Sprinkle the fajita seasoning over the chicken and stir well to coat it evenly. Cook for an additional minute. Then add the sliced onions and bell peppers to the pan.
- Sauté the Vegetables: Cook the chicken, onions, and peppers together for 4-5 minutes until the vegetables soften and the chicken is cooked through.
- Add Cream and Simmer: Pour in the double cream and allow it to bubble for about one minute, creating a rich creamy sauce.
- Combine Pasta and Cheese: Transfer the cooked pasta to the pan with the chicken mixture. Stir well to combine. If the sauce is too thick, add some reserved pasta water a little at a time until desired consistency is reached. Add the grated cheddar and stir until melted and incorporated.
- Season and Serve: Season the dish with freshly ground black pepper to taste. Serve immediately for a warm, creamy, and flavorful meal.
Notes
- Reserve pasta water to adjust sauce consistency without thinning the flavor.
- Use double cream for a richer sauce; substitute with heavy cream if unavailable.
- Customize with other colored bell peppers or add jalapeños for extra heat.
- Ensure chicken is diced uniformly for even cooking.
- Serve with fresh cilantro or a squeeze of lime for added zest, if desired.
