Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line a bread tin with parchment paper and grease it lightly to prevent sticking.
- Mash Bananas and Combine Wet Ingredients: In a large bowl, mash the bananas thoroughly with a fork. Add the eggs, unsweetened applesauce, melted and cooled coconut oil, pure maple syrup, and vanilla extract. Whisk everything together until well combined.
- Add Dry Ingredients: Gently fold in the oat flour, chosen flour (gluten-free blend, all-purpose, or white whole wheat), unsweetened cocoa powder, baking soda, and salt. Mix until all ingredients are fully incorporated without overmixing.
- Fold in Chocolate Chips: Add the 1/2 cup of chocolate chips to the batter, folding them in evenly to distribute the chocolate throughout the bread.
- Pour and Top Batter: Pour the batter into the prepared bread tin, smoothing the top, and sprinkle extra chocolate chips over the surface for a decorative and tasty topping.
- Bake: Bake in the preheated oven for 50 to 55 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
- Cool and Serve: Allow the bread to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
