Ingredients
Main Ingredients
- 1 tablespoon Olive Oil
- 6-8 Sausages (beef, pork, lamb, venison or chicken)
- 1 small onion, finely diced
- 3 cloves of Garlic, crushed
- 2 large Carrots, peeled and sliced on an angle into 1cm pieces
- 2 cups Beef or Chicken Stock (500 ml)
- 1 tablespoon Curry Powder
- 1 tablespoon Tomato Paste or Sauce
- Pinch of Salt & Pepper
- 1 cup Frozen Peas (160 grams)
- 1 tablespoon Cornflour
Instructions
- Prepare Vegetables: Finely dice the onion, crush the garlic cloves, and peel then slice the carrots diagonally into 1cm pieces. Set all aside for cooking.
- Brown the Sausages: Heat a large frying pan with about a tablespoon of olive oil on medium-high heat. Add the sausages and cook until browned on all sides, turning frequently to ensure even coloring. Once browned, remove from heat and set aside; sausages will finish cooking later.
- Sauté Vegetables: Using the same pan and oil, add the diced onion, crushed garlic, and sliced carrot. Cook over low to medium heat for approximately 4-5 minutes until the vegetables are softened and the onion turns translucent.
- Mix Stock and Spices: In a bowl or jug, whisk together the beef or chicken stock, curry powder, tomato paste, and a pinch of salt and pepper until well combined.
- Simmer Sauce: Pour the stock mixture over the softened vegetables in the pan. Increase heat to medium-high and bring to a simmer. Let it simmer for about 4 minutes to meld the flavors.
- Slice Sausages: While the sauce simmers, cut each sausage into 5 or 6 diagonal slices, preparing them to be added back into the sauce.
- Thicken Sauce: Remove about a third of a cup of the simmering liquid from the pan and place into a small bowl. Add the tablespoon of cornflour and whisk until smooth with no lumps. Pour this mixture back into the pan and stir thoroughly to combine and thicken the sauce.
- Combine and Finish Cooking: Add the sliced sausages and the cup of frozen peas into the pan with the thickened sauce. Cook for an additional 4 minutes or until the sauce is thickened and the sausages are fully cooked through.
- Serve: Remove the pan from heat and serve the curried sausages hot with mashed potatoes, rice, or fresh bread for a comforting meal.
- Storage: This dish can be frozen for later use. Allow to cool completely before storing in an airtight container in the freezer.
Notes
- The sausages can be any variety including beef, pork, lamb, venison, or chicken depending on your preference.
- Cutting the carrots on an angle increases their surface area for better cooking and presentation.
- Do not fully cook the sausages when browning; they will finish cooking during simmering to keep them juicy.
- Use a whisk to mix cornflour and liquid to avoid lumps and ensure a smooth sauce.
- Serve with mashed potatoes, rice, or fresh rustic bread to soak up the flavorful sauce.
- This recipe is freezer-friendly; store cooled leftovers in airtight containers for up to 3 months.
