Ingredients
Cucumber Juice
- 2 cucumbers, peeled
Cucumber Margarita (makes 1)
- 2 oz. cucumber juice
- 1 ½ oz. silver tequila
- 1 ½ oz. freshly squeezed lime juice
- 1 oz. Cointreau or triple sec
- ½ oz. simple syrup (optional)
- Lime wedges or twists for garnish
- Cucumber rounds for garnish
Instructions
- Make the cucumber juice: Peel the cucumbers and chop them roughly. Place them in a blender and blend for 45-60 seconds or until the cucumbers have turned into juice. Strain the mixture through a fine mesh strainer and store the cucumber juice in a sealed mason jar in the fridge until ready to use.
- Prepare the glass: Run a lime wedge along the rim of your glass and coat the rim with salt or Tajin for a flavorful edge. Then, add ice to the glass and set it aside.
- Mix the margarita: In a cocktail shaker, combine the cucumber juice, silver tequila, freshly squeezed lime juice, Cointreau, and simple syrup if using. Add ice to the shaker and shake vigorously until the mixture is ice cold.
- Serve: Strain the margarita into the prepared glass over ice. Garnish with lime wedges or twists and cucumber rounds. Serve immediately and enjoy your refreshing cucumber margarita.
Notes
- The cucumber juice should yield around 1-2 cups depending on the water content of your cucumbers; regular cucumbers typically have more water than English cucumbers.
- This recipe makes one margarita but can easily be doubled or tripled for larger groups.
- If using margarita mix, omit the lime juice and simple syrup and instead add 2 ½ oz. of the margarita mix.
- For shortcuts, consider refrigerated cold-pressed lime juice and bottled simple syrup for convenience during entertaining.
