Ingredients
Main Ingredients
- 1 large head green cabbage, cut into 8 wedges
- Extra virgin olive oil, for brushing
- Kosher salt, to taste
- Freshly ground black pepper, to taste
For Serving
- Tahini sauce (prepared according to tahini recipe)
- Dukkah (prepared according to dukkah recipe)
Instructions
- Preheat Oven: Preheat your oven to 450 degrees Fahrenheit and arrange a rack in the middle position.
- Heat Sheet Pan: Place a large sheet pan in the oven to heat up while you prepare the cabbage. This ensures a crispier roast when the cabbage is placed on the hot surface.
- Prepare Cabbage Wedges: Brush each cabbage wedge generously with extra virgin olive oil on both sides. Season with kosher salt and freshly ground black pepper evenly for balanced flavor.
- Arrange Cabbage on Pan: Carefully remove the hot sheet pan from the oven and arrange the cabbage wedges in a single layer, cut sides down to maximize caramelization.
- Roast the Cabbage: Roast on the center rack for about 20 minutes. Then, carefully turn each wedge over using tongs or a spatula, and roast for an additional 15 to 20 minutes until the cabbage is tender and has charred spots for a smoky flavor.
- Prepare Condiments: While the cabbage roasts, prepare the dukkah and tahini sauce as per their respective recipes so they’re ready to serve.
- Finish and Serve: Once the cabbage wedges are roasted and crispy, plate them and finish each wedge with a generous sprinkle of dukkah and a drizzle of tahini sauce to add texture and richness.
Notes
- Use a very large head of cabbage for large wedges to maintain wedge integrity while roasting.
- Make sure the oven rack is centered to ensure even cooking.
- Preheating the baking sheet is key for achieving crispy edges on the cabbage.
- Turn the wedges gently to avoid breaking them apart.
- Dukkah can be made ahead and stored in an airtight container for convenience.
- Tahini sauce adds creaminess and a nutty flavor contrast to the roasted cabbage.
