Ingredients
Crust
- 8 ounces refrigerated crescent rolls (1 8-count can)
Egg Mixture
- 8 eggs
- ¼ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- ¼ teaspoon onion powder
Fillings & Toppings
- 1 cup diced cooked ham
- ⅔ cup finely diced red bell pepper (about ¼-inch pieces)
- 8 ounces shredded Mexican cheese blend (cheddar or colby jack, about 2 cups)
- 1 tablespoon fresh Italian parsley or cilantro (finely chopped)
Instructions
- Prepare the crust: Preheat your oven to 375°F. Unroll the crescent roll dough and press it firmly into the bottom of an ungreased 13×9-inch baking dish. Make sure to press the perforations so the dough holds together well. Then, prick the surface with a fork to prevent bubbling during baking. Bake the crust for 9-10 minutes until it’s set and just beginning to brown along the edges.
- Mix the egg filling: While the crust is baking, whisk together the eggs, kosher salt, freshly ground black pepper, and onion powder in a medium-sized bowl until fully combined and smooth.
- Assemble the casserole: Pour the egg mixture evenly over the prebaked crescent roll crust. Distribute the diced cooked ham and finely diced red bell pepper evenly across the top. Then sprinkle the shredded Mexican cheese blend over everything to create a cheesy layer.
- Bake the casserole: Return the dish to the oven and bake for 20-24 minutes, or until the eggs are fully set and the edges of the casserole are golden brown. This ensures the filling is cooked through and the cheese is melted perfectly.
- Rest and garnish: Once baked, let the casserole rest for 5-10 minutes before serving to allow it to set further. Just before serving, sprinkle with fresh chopped Italian parsley or cilantro for a bright herbal touch and added color.
Notes
- You can substitute the ham with cooked bacon or sausage for variation.
- Make sure to finely dice the bell pepper to match the size of the ham for even distribution and texture.
- Use a Mexican cheese blend or your favorite cheddar for the best melty, flavorful topping.
- The resting period after baking helps the casserole hold together when sliced.
- For a spicier kick, add a pinch of chili powder or diced jalapeño to the egg mixture.
