Instructions

  1. Whisk the egg yolks and sugar: In a medium bowl, vigorously whisk together the egg yolks and sugar until the mixture is pale and creamy, ensuring the sugar is well dissolved and the eggs are smooth.
  2. Heat the dairy mixture: In a medium saucepan over medium heat, combine the heavy whipping cream, 2% milk, pure maple syrup, vanilla extract, and ground nutmeg. Stir frequently and heat gently until the mixture reaches about 165°F (74°C), being careful not to let it boil.
  3. Temper the eggs: Gradually add the hot cream mixture into the egg yolks by drizzling a small amount at a time into the bowl while whisking constantly. Continue this until about half of the hot mixture has been incorporated into the eggs.
  4. Cook the combined mixture: Pour the tempered egg mixture back into the saucepan with the remaining cream mixture. Heat gently, stirring frequently, until the temperature again reaches 165°F (74°C). Remove from heat immediately to prevent curdling.
  5. Chill the eggnog: Transfer the eggnog into a glass pitcher and cover it with a lid or plastic wrap. Refrigerate for at least 2 hours or until well chilled. The eggnog will thicken slightly as it cools.
  6. Serve: Pour the chilled eggnog into glasses. Add a splash of brandy or rum if desired. Garnish with a swirl of heavy whipping cream, a sprinkle of cinnamon, and a cinnamon stick for a festive presentation.
