Rice and Seasoning

- 1/2 lime (juice of)
- 3 tablespoons fresh chopped cilantro
- 2 teaspoons olive oil (for tossing with rice)
Instructions
- Combine Ingredients for Cooking: In a small or medium heavy pot with a tight-fitting lid, add the rice, water, 1 teaspoon of olive oil, and kosher salt. This ensures the rice is well seasoned and has a slight oil coating to prevent sticking.
- Cook the Rice: Bring the mixture to a boil over high heat. Cook until most of the water has evaporated and a thin layer remains just skimming the top of the rice. Then, cover the pot and reduce the heat to low. Let it simmer undisturbed for 15 minutes to allow the rice to absorb the water evenly without stirring or lifting the lid.
- Steam the Rice: After 15 minutes, turn off the heat and keep the pot covered for an additional 5 minutes. This step lets the rice steam, ensuring a fluffy texture. Avoid peeking to maintain the steam.
- Fluff and Mix: After steaming, fluff the rice gently with a fork to separate the grains. In a medium bowl, combine the chopped cilantro, lime juice, remaining 2 teaspoons of olive oil, and the fluffy rice. Toss thoroughly until all ingredients are well incorporated and the rice is evenly coated with the fresh flavors.
Notes
- Use a heavy-bottomed pot with a tight-fitting lid for even cooking and to trap steam properly.
- Do not stir the rice while it’s cooking to prevent gumminess.
- Allow the rice to steam undisturbed after cooking for the fluffiest texture.
- Adjust the amount of lime juice and cilantro to taste for a more or less tangy and herbaceous flavor.
