Ingredients

Orange Peels

  • 2 oranges
  • Approximately 4 cups water, divided (two additions of 2 cups each for boiling)
  • 1 cup sugar (250 milliliters)
  • 1 cup water (250 milliliters) for syrup

Chocolate Coating

  • 3 ounces dark chocolate (70% cocoa content, 90 grams)

Instructions

  1. Prepare Oranges: Wash the oranges thoroughly under running hot water to remove any residues or wax.
  2. Remove Peel: Cut off the top and bottom ends of each orange. Make 4 to 5 vertical incisions from top to bottom of the peel, cutting into the flesh. Carefully remove the peel using your hands.
  3. Cut Peels: Slice the orange peels into thin strips and place them into a pot.
  4. Boil to Remove Bitterness: Pour about 2 cups of water over the peels and bring to a boil. Boil for 5 minutes, then drain the water. Repeat this process once more with fresh water to lessen the bitterness of the peels.
  5. Simmer in Sugar Syrup: In a small saucepan, dissolve 1 cup sugar in 1 cup water. Add the boiled peels and simmer gently for about 45 minutes until the peels become translucent and tender.
